  • Toasting it does two things: 1) It adds a *great* flavor hit to the soup ??? you have to try it to understand it ??? especially if you???re not including chicken (which we don???t, when it???s a side soup) and 2) toasted pasta will hold up in the soup (or any other soup ??? we use this technique with vermicelli, etc. often) for several days, unlike rice or plain orzo.
