  • Summary of the Invention The present invention provides a method for synthesizing a starch ester, particularly starch acetate, using an acid catalyst which results in a product characterized by at least about 20% high molecular weight carbohydrates (less depolymerization) and less discoloration (greater whiteness) than starch acetate produced using a prior art catalyst, such as sulfuric acid.
