  • The result was a bread with extremely uneven browning on top (soft crust) - the bread just 'swelled' like a balloon (lifting off the baking stone)...and ultimately an unsatisfactory crumb structure - there were some big holes but mostly just mush.Perhaps ciabatta was a case of trying to run before I can walk...?
