  • Very few studies have focused upon the phenolic composition of olive seeds, nevertheless some phenolic compounds have been identified including salidroside, nuzhenide, hydroxytyrosol, nuzhenide 11-methyl oleoside, oleuropein, tyrosol, and demethyloleuropein (Figure 1) at all stages of maturation (Maestro-Dur??n et al. 1994, Servili et al.1999, Silva et al. 2010).
