  • With regard to mineral additions, I generally add everything to the kettle so that I can use only acid to adjust mash and sparge pH. I can then adjust mineral additions for flavor without worrying about their effect on mash pH. Starting around a year ago, each recipe post on this blog details the mineral and acid additions, including timing and (sometimes) rationale.
