http://www.w3.org/ns/prov#value | - Fiber is technically a carbohydrate but is a carbohydrate that human stomachs cannot break down into its component sugars (cows can do it, but they have four stomachs and a really elaborate procedure, aided by friendly microorganisms.) Therefore it does not 'count' on a low-carb diet because it does not raise the blood sugar.
