  • my roux is equal parts oil to flour and i cook on a low heat for about 30 minutes or more - it should look like the color of an old penny - so get an old penny & put it next to your roux pot! i know what roux should look like, and the i have seen other than a recipe very much like this one, you will have something other than real roux - believe me!
