  • I LOVE making reductions. (In cooking, reduction is the process of thickening and intensifying the flavor of a liquid mixture such as a soup or sauce.) In many of the recipes I use, they utilize the little brown bits (also called fonds) leftover in a pan after frying to make a rich sauce.
