  • Beef shin is certainly a common ingredient in the UK, you can get it from most supermarkets - you would probably know it as shank :) It might be worth checking the back with regards to carrots, there is a section on using the book that explains when 500g carrots is pre/post cutting. 15 carrots is a lot!Beef shank I have head of, but the store didn't have any.
