| http://www.w3.org/ns/prov#value | - low and slow...like 24 hours in the slow cooker, will make a nice second broth. start with cold water. i do not add vinegar to my broths, and i get a lot of gelatin. also, for long cooking, do not add veggies or herbs, particularly onion skins, until the last few hours of cooking. onion skins make a very dark broth as you described...and overcooking the veggies makes it bitter.
